Big Daddy Nachos Recipe

As I mentioned in my 2009 NFL Week 1 Predictions post, we have added a new item to the menu here on Sunday’s for our usual football Sunday celebration, the first menu item ever to be put on the list was Lisa’s Famous Chili.

The item I wanted to add to the football Sunday menu this year was a nice heaping pile of baked Nachos, layered of course. Now before I post the recipe for my Big Daddy Nachos I think it’s important that you know I really don’t measure any of this out, I throw it together and it comes out how it comes out.

Big Daddy Nachos Recipe

  • 1lb of 98% Lean Ground Beef
  • 1lb of Cut Boneless Skinless Chicken Breast
  • 4 Cups of Mild Shredded Cheddar Cheese
  • 1/2 Onion Sliced thin
  • Bacon Bits
  • Shredded Lettuce
  • Diced Tomato
  • Giant bag of Tostitos Chips
  • Taco Seasoning
  • Pepper
  • Salt

Brown ground beef in a large pan and sprinkle Taco seasoning into onto the meat, make sure you stir in the Taco seasoning so it flavors all of the ground beef.

On a medium flame add small cut pieces of chicken breast into a small pan with olive oil coating the bottom of the pan, season lightly with pepper and salt.

Make sure you drain the ground beef and the chicken before moving on to the next step, the chicken should not have any pink showing in order to ensure it is cooked thoroughly.

Empty half of the Tostitos bag on to a large cookie sheet and spread the chips out to cover the entire cookie sheet, sprinkle chicken, ground beef, onions and two cups of cheddar cheese evenly over the top of the chips. Be sure not to use all of the ground beef, cheese, onions or chicken on during this step, Big Daddy Nachos are layered and you will need more of the toppings for the final layer.

After adding your desired toppings, spread the rest of the Tostitos chips across the layer of toppings you just put on the first layer of chips. Sprinkle the remaining chicken, onions, cheese and ground beef evenly across the top of the new layer of chips. I recommend that the last layer that you place on your Big Daddy Nachos is the cheddar cheese, it helps hold everything together as everyone dives into the chips.

Sprinkle the final layer of everything with a desired amount of salt and pepper, place cookie sheet into a pre-heated oven on the top shelf at 375 degrees, you should bake at this temperature for approximately 13 minutes. Cooking time may vary based on how baked you prefer your chips and cheese, all though I would recommend keeping the chips in the oven until the cheese has melted.

After you pull the chips out of the oven (use a glove dumby), sprinkle the desired amount of chopped tomatoes and shredded lettuce on top of your chips and serve.

There is always room for improvement when it comes to my recipes, especially for anyone that enjoys condiments. I’ve never really liked condiments so the sour cream won’t work for me, but others will def. appreciate that tip.

I’m cheap: I mix refried beans with the beef to get more mileage out of the protein & iron without spending the money on chicken. And let’s see, we’ve had the sour cream and jalapeno recommendations (I personally prefer the fresh peppers with seeds included!), but no one has mentioned chives yet. Its really just more onion, but it adds a special little kick. I guess the difference is that I end up chopping more veggies to cook with the meat and tobasco on top instead of using the taco seasoning. Same end, more work: maybe a little health concious with the veggie vitamins because I end up going stretches of eating nothing but nachos for a week.

But I see some ideas to incorporate here, too. I’ve never really baked the nachos, and I’ve never really tried the double-layer thing. Definitely going to make the next set of nachos feel particularly epic.

Oh damn, I’m really hungry now and I haven’t got anything started.

Those sound good John! Being in Southern California… all Mexican dishes comes with guacamole and sour cream and I don’t care for either on my food. I think I am the only person in San Diego who doesn’t like guacamole.

I like to add some minced garlic to the ground beef. It gives the meat a real kick.

And while we are adding peppers, let’s throw some habernero in there for some extra burn factor, not a whole lot, just enough to keep everyone on their toes. I grow some hotter ones, but those little devils (that is actually what we call them) are dangerous. We want our guests to drink beer, not milk!

And, of course, you can always add extra cheese. You can’t have too much cheese on nachos.

With all this extra help, you really have a great recipe. And you can change it around each time, so your guests never know what they will be eating from one party to the next.

@Extreme John, My lady wants me to grow the peppers that look like a pecker next year. I thought she was joking until I saw the pictures. Some of them actually do look similar. How would I ever explain that one to my beer buddies?

How would you like a pepper like that on your nachos? Not me! It’s easy enough to get talk started without munching on a peter pepper.

But I usually do what she says (I have learned that much) so I’ll send you a picture next year.

The nachos look great. With all the variations, you can make a few different batches to accommodate everyone. I like fresh salsa topped at the end, with Jalapenos on the side. We make a plain batch for the kids with just chips and cheese. Who is going to follow up this post with the perfect BBQ items to go with the nachos? How about a guest recipe post each week. I’ll write up my Classic Game Day Margarita recipe if anyone is interested.It goes great with Tri-Tip or Brats!

John, thanks for sharing! Wow, those nachos sound like a meal! I do something similar to one of the comments above. I like to mix ground bison (more protein and less fat) with black beans. It tastes terrific! I’m going to try your meaty recipe the next time I have “the guys” over.
